Most olive oil is harvested late for yield, filtered for shelf life, and blended for the bland middle. We do the opposite. We pick green and early, press cold within hours, and bottle the oil exactly as the tree gave it — unfiltered, single-estate, alive. The result bites back.

Our Method
Three daring choices

Picked Early
Harvested green in the first weeks of autumn, when the fruit is most intense and the polyphenols run highest.

Pressed Cold
Cold-extracted within hours of picking, never heated — so the aroma, the colour and the goodness survive the journey to the bottle.

Bottled Unfiltered
We never filter it clear. A little cloud, a little sediment — the sign of an oil left exactly as the tree intended.
